Cheesy Does It

Hello, my name is Lauren and I'm a cheesaholic. That's right folks, I'm addicted to the cheesahol. Sigh. Better get to work then right?

Four ingredients; goat cheese, bacon, jalapenos, apricot jelly. Possibilities? Endless.

Today I decide to try out baked goat cheese covered with jelly and bacon. That's right. I've combined fried cheese AND bacon. What's not to love, amIright?

So, here is the evolution of my newest temptation.

Ingredients (in case you missed that line two paragraphs above):
1/2 cup apricot preserve
1/4 tbs. chopped jalapenos (I usually make roasted chopped jalapenos, but I was lazy today and broke out the canned stuff)
Goat cheese sliced into 1/4 inch slices (I used floss to cut it. Super easy. Thanks for the tip Ina Garten.)
Bacon. As much or as little as you want. I used 6 slices.
Directions:
Preheat oven to 425. Cover cookie sheet with foil and coat with baking spray.
Mix apricot jelly and jalapenos until well incorporated.
Crumble up bacon into bits.
Coat cheese in jelly.
Coat cheese with bacon.
Place on cookie sheet and bake for 3-5 minutes or until the goat cheese is warm.
After trying one of these delicious little morsels, I realized this would make a much better spread than a stand alone snack. So, I mixed them all up in a nice little bowl.
Then, I made a grilled sandwich with the spread, Boar's Head Blazin' Buffalo chicken, and some tomato slices. It_was_awesome. Won't be making this again for awhile, but if it weren't for the calories I would eat this everyday. Every.Day.
